This is BY FAR my favorite Sunday morning tradition. I make CLEAN pancakes. I get to have three huge pancakes to myself without the guilt of the flour filled kind. It’s delicious #nosyrupneeded 🙂
BANANA OAT GREEK YOGURT PANCAKES (serves 1)
1/2 cup Rolled Oats
1/2 tsp. Baking Powder
1/2 tsp Cinnamon
1/2 Medium Banana (sliced)
1/4 Cup Plain Greek Yogurt
2 Tbsp. Unsweetened Almond Milk
1/2 tsp Vanilla Extract
1 Cup Berries
Preheat skillet over medium heat and coat with cooking spray or cocunut oil. Add all ingredients in a blender in the order listed (minus the berries) and blend until oats are broken down and batter is frothy. Cook one minute, flip, cook 2 more minutes. Repeat with remaining batter, making sure to coat skillet with a little oil in between each batch. Top wth Berries
